Second week of holiday!

My second week in Sweden I tried to take it a bit easier than the first. Try to wind down, not set an alarm and lower the pace. The first day that didn’t happen as I had invited eight adults and five children over for lunch, but I think I managed OK the rest of the week.

But back to the lunch. I skipped a starter so the children didn’t have to sit still for too long; instead everybody could mingle around with a glass of rosé in hand and snacking on these lovely crisps with browned butter, lemon juice and grated cheese.

For the main course I made chicken with lots of garlic and lemon, potato wedges, caramelised garlic sauce and a nice salad.

And for pudding I let everybody put together their own pudding of soft meringue (everybody loves this one!), ice cream, lightly whipped cream, chocolate sauce. berries and figs.

In the evening I had a simple supper consisting of Danish red pølse and all the trimmings. So yummy!!

The next day I went to the beach in Skanör with friends and their three children.

They brought a lovely picnic and there was a lot of swimming with the kids mixed with chatting to their parents. Such a lovely day that we finished off with a late lunch in the harbour nearby followed by ice cream.

Wednesday I slept late and spent my time in the sun in the garden before going for dinner at a friend’s new house! They’d made salmon with salad, potato wedges, two sauces and nice bread and for pudding we had rhubarb pie with ice cream. A perfect summer’s evening.

The next day was another quiet one, with some rain but also some time on the beach (yay!) before having dinner with my parents in the evening. I made lots of pizzas which I will blog about later.

Friday started off the same way (not bad eh?! three lazy days in a row!) and finished with dinner at Badhytten with all the seafood!

My last full day in Sweden I spent partly with my best friend, partly with my parents. Friends of the family came by for fika in the afternoon and in the evening my parents and I had something we never get tired off; fillet of beef with homemade bearnaise sauce. This was the first time we had dinner indoors as the weather turned, but I’m grateful for the sunny days I got!

Sunday was my last day and my best friend and her family came over for lunch with my parents. I got lots of cuddles from my god daughter but we also had some lovely food. Mamma cooked arctic char with potatoes, mange tout, carrots and two sauces; one with caviar and this one with apple. The pudding was a huge success too (although dad would have liked a sweeter version) and I will blog all about it later.

Then off I went to the airport with a quick pit stop at my parents’ house where I hadn’t been all summer. Thank you, near and dear ones, for a lovely two weeks! ❤

Theatre, BBQ and sport

I must admit I feel slightly stressed that it’s already the middle of July. In less than two weeks I go home to Sweden for two weeks and I have quite a lot to do before then, but the main reason I’m stressed is that I don’t want this lovely summer to end! It’s been so lovely and I want it to continue forever.

I’m really looking forward to my weeks in Sweden but London is lovely too at the moment. Last week was busy but fun and one of the highlight was definitely the RAF fly-over on Tuesday to mark their hundred year anniversary. Wow!

In the evening I met up with the girls at Chick ‘n’ Sours for nachos (probably the best ever), fried chicken, cocktails and of course a proper catch-up. It was much needed and so lovely!

On Thursday I was invited to Shakespeare’s The Tempest at an outdoor theatre in Covent Garden. Always nice with some culture!

And before the theatre we had a quick meal at cosy Polpo nearby. Love those meatballs!

Friday I had a (much needed) night in, with face masks, scented candles and a not great but fine rom-com.

The weekend was all about sport, apart from the Saturday evening which was all about Tim (the birthday boy) and the barbecue him and Laura had arranged. We had Pimm’s and snacks in the garden, followed by a barbecue complete with burgers and two types of sausages and finished off with proper American s’mores. Yum! When it got dark we ventured inside for board games and champagne.

Sunday started with a lie-in (yes!) followed by a whole afternoon in a lovely beer garden watching both the Wimbledon final and the World Cup final.

It was nice and relaxing with a glass of rosé in hand. Afterwards we went for a little walk, then headed back for homemade club sandwiches and the last episode of Billions. Can’t wait for the next season to start!

Recipe: Queso fundido!

Mexican cheese dip. With chorizo and peppers. Melting, bubbly and comforting. I simply cannot think of a better way to start a mid-week cold January supper with some of my closest friends. It was like a warming cheesy hug, telling us if we persevered we would get through the month. Et voila!, it’s February!

We also had prosecco, tacos and lots of fun, which helped.

But back to the dip. It’s very easy to make and so satisfying to eat. But have plenty of napkins to hand as it is a little messy. Also, be patient and wait for the dip to be completely melted when you serve it. I would suggest putting it in the oven 30 minutes or so before the guests are due to arrive. You can always cover it with tin foil and lower the temperature to keep it hot and bubbling.

The chorizo and peppers add a lot of flavour to the otherwise unexciting grated mozzarella (I was a little worried it wouldn’t be cheesy enough but it was). But I can’t help but thinking it could be made even better with the addition of jalapenos next time. Stay tuned…

Queso fundido, serves 4

75 g cooking chorizo, finely chopped

1/2 pepper, finely chopped

500 g grated mozzarella

oil for frying

a pinch of cayenne or other chilli powder

To serve: tortilla chips

Fry the chorizo in oil until crispy. Set aside and fry the pepper in the chorizo oil. Drain on kitchen roll. 

In an oven-proof dish, put a layer of cheese, then scatter chorizo and peppers on top and repeat the process until all ingredients are used up. Sprinkle with cayenne and put in a 200C oven until melted and bubbly (approx 40 mins). Serve immediately with tortilla chips.
