Brownies with dulce de leche frosting

This frosting feels like magic. Despite the fact that it contains dulce de leche, full fat cream cheese and whipped cream it makes these dense brownies appear lighter than they are without any frosting.

Plus the killer combination of heavy chocolate and sweet but not sickly dulce de leche is just delicious! But you had probably figured that out already.

I’ve made these bad boys twice now and they went down a storm both times. At work they couldn’t believe they felt as light as they did and when I made them at a brunch for my friends in Sweden I got asked for the recipe straight away.

The idea for the combination of flavours and the frosting recipe is entirely my own creation, but I used my go-to brownie recipe courtesy of The Hummingbird Bakery. There is no point trying to come up with a perfect brownie recipe when it already exists.

Brownies, makes 18-20

Adapted from The Hummingbird Bakery’s wonderful recipe.

5 eggs

500 g caster sugar

100 g cocoa

120 g plain flour

250 g melted butter

50 g roughly chopped dark chocolate 

Beat eggs and sugar fluffy and white. Add flour and cocoa, then the butter. Mix thoroughly. Fold in the nuts and chocolate and pour into a lined baking tray. Bake for 30-35 mins in 170C. Leave to cool completely.

Dulce de leche frosting, enough for one batch of brownies

200 g (half a tin) dulce de leche 

200 g Philadelphia

300 ml whipping cream

Mix dulce de leche and Philadelphia in a bowl. Whip the cream in another bowl and mix into the dulce de leche mixture. Whip the mixture with an electric mixer to make it even fluffier. Place a spoonful of the frosting on each brownie. Decorate with a dusting of cocoa. 

Nigella’s snowflecked brownies

I used to bake these snowflecked brownies courtesy of Nigella a lot before, pre-blog, and somehow I thought of them again and made it for my brunch between Christmas and New Year. That made me realise what a great recipe this is! A lot of recipes I used to love before the blog are now disappointing, but this is definitely not one of them. These brownies have begun a revival in my kitchen; I’m planning on making them for the office this month and probably some dinner parties too.

The texture is absolutely wonderful; moist and dense, but in a good way, speckled with white chocolate. What’s not to like?!

Nigella’s snowflecked brownies, makes 20 pieces

Adapted from the recipe in Feast by Nigella Lawson

375 g salted butter

375 g dark high quality chocolate

6 eggs

350 g caster sugar 

1 tbsp vanilla

225 g plain flour

1 tsp salt

250 g roughly chopped white chocolate

Icing sugar for serving 

Pre-heat the oven to 180C. Line a baking tin measuring 33 x 23 cm with baking parchment. Melt butter and dark chocolate in a large heavy pan on low heat. Leave to cool. Beat eggs and sugar until pale and fluffy. Add the vanilla and the chocolate mixture. Fold in the flour and salt. Add the white chocolate and pour the batter into the tin. Bake for 25 minutes. The top layer should be pale with a dark still moist layer underneath. Leave to cool and cut into squares. Dust with icing sugar and serve. They freeze well. 

Brownies with the best chocolate frosting

I like to bake for the office because that way I get to try new recipes and the cakes will get eaten (by others than me) and most people in my office like something sweet with a cup of tea.

Normally we buy cakes for the office once a month to celebrate that month’s birthdays, but in July I was asked to make them instead.

I suspected these brownies to a crowd pleaser, and they were. The deep chocolate dense brownie together with the sweeter fluffy frosting was absolutely amazing. The brownie would have been nice on its own as well, but the frosting made it so much better. This frosting is the best chocolate frosting I have come across so far. Very chocolatey, but not too sweet because of the cream cheese. In the future I will definitely try this on cupcakes and in other cakes.

The recipe is courtesy of the Hummingbird Bakery, from their first cookbook. The recipe calls for walnuts and some dark chocolate, but I substituted that for hazelnuts and milk chocolate which worked wonders, so use what you like.

Brownies with the best chocolate frosting, makes 18-20

5 eggs

30 g roughly chopped nuts (i.e. walnuts or hazelnuts)

30 g roughly chopped chocolate (I used milk chocolate)

Frosting:

200 g icing sugar

75 g softened butter

30 g cocoa

150 g cream cheese, cold

Bear eggs and sugar fluffy and white. Add flour and cocoa, then the butter. Mix thoroughly. Fold in the nuts and chocolate and pour into a lined baking tray. Bake for 30-35 mins in 170C. Leave to cool completely.

Beat icing sugar, butter and cocoa with an electric mixer. Add the cream cheese and beat for five minutes, not longer. Spread onto the cold cake. Cut into squares and serve.
