Dill-y hummus and pitta chips

Dill works really well in hummus, I discovered this summer when I thought of trying it for a dinner party. It went down really well with my friends and especially with my best friend Emma who liked it so much she urged me to make it again a few days later when cooking at her house.

Dill-y hummus, serves 4-6

1 can (400 g) good quality chickpeas

100-150 ml nice olive oil

1 1/2 – 2 tbsp tahini

1/2 -1 lemon, the juice only

1 medium garlic clove

1 pot or a large bunch dill

plenty of salt and black pepper

Rinse the chickpeas and pour into a food processor bowl. Add 100 ml olive oil, 1 1/2 tbsp tahini, the garlic and the juice of 1/2 lemon. Mix for a good while until you have a smooth paste. Add salt and pepper and taste. Add more oil, tahini, lemon juice, salt and pepper – whatever you think is needed. Add the dill and mix again. Season to taste and adjust the flavours once more if needed. Place in fridge until serving. Keeps for 5 days in the fridge.  

Pitta chips, serves 4

5 pitta bread

olive oil

salt, black pepper

Cut the pitta breads into smaller pieces using a pair of scissors. Place on a parchment lined baking tray and drizzle with olive oil. Add salt and pepper (and any other seasoning you might like) and place in 200C oven for approx 10 minutes (until golden and crispy). Serve immediately.

Roasted Jerusalem artichokes with browned butter mayo

Jerusalem artichokes. Once they were just a humble root vegetable used for peasant food and then suddenly it’s a gourmet vegetable.

Fine with me; I really like the earthy sweet taste. And if you have a plot of land to grow your own, it’s, according to my mother, the easiest vegetable to grow as it spreads like weed.

I usually use them for soup as I never get tired of the comforting flavour it has, but sometimes I roast them in the oven. Last time I made sort of a sharing dish with browned butter mayonnaise and grated comté. It’s very simple to make (apart form the mayo) and feels luxurious despite the simple ingredients.

Just a note about the mayonnaise: it’s just as easy to make as regular mayonnaise but make sure the butter has cooled down before incorporating into the mayo. And please make it just before serving as mine split after a while in room temperature. It’s not a huge problem though, as you don’t really want to leave any of it – it’s that good!

Roasted Jerusalem artichokes with browned butter mayonnaise, serves 2 (starter size portions)

200 g small Jerusalem artichokes, washed 

oil for roasting

salt and pepper

grated comté

2 lemon wedges (optional)

Cut the artichokes in half lengthways. Place in a roasting tin and drizzle with some oil. Add salt and pepper and stir around so all pieces are coated with oil and seasoning. Roast in 225C until soft but with crunchy exterior, approx 20 minutes. 

Serve with the mayo below and grated comté. And maybe some lemon juice. 

Browned butter mayonnaise

100 g butter

1 egg yolk, at room temperature

1 tsp dijon mustard

1 tsp white wine vinegar

approx 3 tbsp neutral oil

1/2 lemon

salt, white pepper

Brown the butter and let cool until room temperature. Whisk egg yolk, mustard and vinegar in a bowl. Add the oil drop by drop while whisking. Once you have the start of a mayonnaise, add the butter little by little while whisking and letting the mixture thicken. Season to taste with lemon juice, salt and pepper. Serve immediately. 

Chicken liver mousse with white wine and rosemary

I like some DIY action when I host parties, like the blini table I had one year, and the crostinis with different spreads in jars in December.

Not surprisingly, my friends loved the smoked salmon spread (this is like the essence of Scandinavia, Hanna – oh yes!), whereas I prefer the deeper, more complex flavours of the chicken liver mousse. But when my friends had overcome the hurdle of the brown dull colour and tasted it, they also really enjoyed it!

Chicken liver mousse with white wine and rosemary 

400 g chicken liver (approx 375 g with tendons removed)

1 shallots, finely chopped

1 clove of garlic, chopped

1 tbsp chopped rosemary

100 ml dry white wine

4 anchovies from a tin

100 ml homemade chicken stock

50-100 ml cream

 

Remove all tendons and chop the liver coarsely. Fry the onion until soft in butter and oil on medium heat. Add the garlic and rosemary, making sure the garlic does not burn. Add the wine and let some of it evaporate. Add the anchovies and let them melt. Turn up the heat and add the liver and fry until cooked through. Add the stock and let some evaporate but still keeping a good amount of liquid in the pan. 

Mix until smooth in a food processor. Add the cream little by little until desired consistency. Push through a fine sieve. Leave to cool and refrigerate. 

Poached egg with girolles, Västerbotten cheese and toasted hazelnuts

My first attempt at cooking a 63C egg didn’t work too well, as I tried to multitask and wasn’t paying attention the whole time. Big mistake. Huge. So instead I poached eggs. And served it with butter-fried girolles, Västerbotten cheese and toasted hazelnuts. It was delicious but I still dream of perfecting that 63C egg and serve it with girolles. I mean, is there anything better than a runny egg yolk with garlicky mushrooms?! I don’t think so.

Listening to my favourite food podcast (in Swedish) I learnt a new way to toast nuts, in the oven. So much better than in a dry frying pan. It will change your life. I promise. All you need to remember is 150C for 15 minutes.

Poached egg with girolles, Västerbotten cheese and toasted hazelnuts, serves 2

2 fresh eggs

a splash of vinegar 

200 g girolles

1 tbsp butter

1 garlic clove, chopped

salt, pepper

chopped parsley

2 tbsp grated Västerbotten cheese (or comté)  

20 hazelnuts

Pre-heat the oven to 150C. Pour the nuts into an oven-proof tray and toast for 15 minutes. Clean the mushrooms and fry in butter with the garlic until golden brown. Add salt, pepper and parsley and put aside. 

Take a large saucepan and fill half of it with water from a just boiled kettle. Bring the water to a gentle simmer (it should not boil) and add the vinegar. Pour ice cold water into a bowl and have a slotted spoon at hand. Crack and egg into a mug or cup. With a spoon, create a whirl in the pan and lower the mug/cup with the egg into the water and pour it out. Repeat with a second egg and let them poach for 3 minutes. Remove with the slotted spoon and place in the cold water for a few minutes. Remove with the slotted spoon and drain on kitchen towel. 

Re-heat the mushrooms is needed. Divide them between to plates, leaving a hole in the middle for the egg. Scatter with grated cheese. Chop the nuts and scatter. Serve immediately. 

Hot smoked salmon spread for crostinis

The London crayfish party was a success and so much fun! There was only ten of us but we managed to demolish 5 kgs crayfish and drink two bottles of snaps (as well as beer and wine) and sing snaps songs. Thank you to everyone involved for embracing my country’s silly traditions and being such fun guests!

Before we started on the crayfish though, we had some prosecco and nibbles. I usually start a dinner party with nibbles as I think it’s such a nice informal way to start the evening and get people chatting. One of the nibbles I made was this hot smoked salmon spread. I just put it in a bowl and the guests assembled their own crostinis.

Hot smoked salmon spread, enough for 5 people as a nibble

Adapted after and translated from Arla’s recipe.

350 g hot smoked salmon fillets (no bones)

200 ml soured cream

2 tbsp freshly grated horseradish

1/2 bunch chives

1/2 lemon, the juice

salt, black pepper

Check the salmon for bones and remove them and any skin. Place in a bowl and mush it with a fork. Add soured cream, horseradish (Ocado has the fresh stuff) and lemon juice. Add the lemon juice and season to taste. Keep refrigerated until serving. 

Crab tarlets with chives, red chilli and lime

These wonderful tartlets came about when a colleague was asking me for a recipe for a crab tartlet. I didn’t know a nice one so she used a recipe by Mary Berry that she raved about afterwards. So of course I had to try it. But for some reason I wasn’t in the mood for full on Thai flavours in the filling like the recipe suggests so I made my own filling with chives, red chilli and lime instead.

It turned out really well. Less full on flavours, but it complemented the crab perfectly and the crab taste came through more. It’s perfect as a light lunch or a starter.

I only made two tartlets but made one full batch of the dough (for eight) as I like having pastry in the freezer. It’s just fiddly to make a small batch anyway.

Crab tarlets with chives, red chilli and lime, makes 2 small tartlets

I made the dough using Mary Berry’s recioe while the filling is my own

Pastry (freeze what you don’t use):

175 g plain flour

1 tsp Coleman’s mustard powder

75 g butter, cut into cubes

50 g parmesan, finely grated

1 egg, beaten

Filling:

100 g crab meat

1/2 röd chilli, finely chopped 

1/2 lime, zest only

3 tbsp chopped chives

1 beaten egg

100 ml cream

salt, white pepper

Preheat the oven and a baking tray to 200C. 

Start with the dough; mix flour, butter and mustard powder in a food processor until you have crumbs. Add the egg and the parmesan and run the food processor until the dough comes together. 

Press out (or roll if you prefer) the dough into two small dishes with a fluted edge. Freeze the remaining dough. 

Mix crab meat, lime zest, chilli and chives in a bowl. Divide between the tartlets. Beat eggs and cream, season well and fill up the tartlets. 

Place the tartlets on the now hot baking tray and bake for 15-20 minutes, until the filling is set. Leave to cool a little and serve with a salad. 

Seafood toasts

During the Christmas break we had plenty of Toast Skagen at home in Sweden as it is so easy to get hold of good cold water prawns. I love this toast and for one dinner party we made a cured salmon toast as well and served both (although smaller than usual) as a starter. So yummy!

Toast Skagen, serves 4

4 slices white bread

butter for frying

4 lettuce leaved (such as little gem)

 750g cold water prawns, preferably unpeeled

1 batch homemade mayo (without the chipotle paste)

1 tbsp chopped dill

salt, white pepper

lemon, dill and lumpfish roe to serve

Cut out a round of each bread slice using a glass or a cutter. Fry the bread golden brown in butter on both sides. Leave to cool. 

Peel the prawns. Make the mayonnaise. Chop the dill and mix it together. Season. Place a lettuce leaf on each bread round, top with the prawn mixture and decorate with a sliced lemon, roe and dill.

Salmon toast, serves 4

4 slices white bread

butter for frying

4 lettuce leaves (such as little gem)

4 larger slices homemade cured salmon (gravadlax)

100 g Philadelphia

1 tsp paprika

1 tbsp chopped chives

1 small pinch cayenne pepper

salt, white pepper

dill to decorate

Cut out a round of each bread slice using a glass or a cutter. Fry the bread golden brown in butter on both sides. Leave to cool. 

Mix the cream cheese with chives, paprika, cayenne, salt and pepper. Spread the mixture onto the bread rounds. Add the lettuce leaves and roll the salmon slice into a rose and place on top of the lettuce. Decorate with dill and serve. 

 

 

 

 

Truffled mushroom crostini

Twice in December I made these truffled mushroom crostinis for my friends. Above with chantarelles and chestnut mushrooms and below with only chestnut mushrooms as I was feeding lots of people and fresh chantarelles aren’t exactly cheap. What’s great about the recipe is that it can feed anyone. It’s vegan and works for people sensitive to dairy, and if you make glutenfree crostinis this works for coeliacs as well.

When using the chantarelle mushrooms I added a bit of cream for added creaminess, so feel free to do that if you like, but plenty of oil (or use butter) is enough moisture for me.

Truffled mushroom crostini (vegan), makes quite a few

1 large baguette

mild olive oil

400 g mixed mushrooms

oil for frying

1 garlic clove, pressed

2 tbsp porcini mushroom and truffle paste (I used this one)

salt, black pepper

chopped parsley for serving

Slice the baguette, place the slices on a baking tray and drizzle with olive oil. Bake in 180C oven until golden brown and crisp, about 10 minutes. Leave to cool. 

Slice the mushrooms. Fry until golden in oil on medium heat (preferably in batches). Add the garlic and fry for another minute or so. Add the truffle paste, salt and pepper. Divide between the crostini and topped with chopped parsley. 

Homemade pinxtos

Mother and I made pinxtos for our guests at two separate occasions this summer. I often serve crostini or bruschetta at dinner parties and this is obviously similar. Only difference is that you usually don’t toast the bread for pinxtos (which we did) and the toothpick securing the toppings. In Spain you can serve almost anything on or as pinxtos, but most common are crab and mayonnaise, prawns with mayonnaise, baby eels, morcilla or jamon.

Ours were pretty simple, like tomato (from my parents’ garden), basil (also from the garden), buffalo mozzarella and olive oil.

And one with crayfish, dill and rosé pepper. At the second dinner party we varied ourselves with toast Öjeby, which also worked really well.

Crayfish pinxtos with dill and rosé pepper, makes about 8

8 slices baguette

olive oil

1 tub crayfish tails, drained 

100 ml creme fraiche

2 tbsp Hellman’s mayonnaise

1 tsp crushed rosé peppercorns 

chopped dill

salt, white pepper

lemon and dill to decorate

Place the bread slices on a baking tray. Drizzle with olive oil. Bake in 200C for 10-15 minutes or until golden. Leave to cool. Mix creme fraiche and mayo in a bowl. Chop the crayfish tails and add to the mixture. Then add in rosé pepper and dill. Season to taste. Divide between the baguette slices. Decorate with lemon and dill and serve immediately. 

Two types of crostini to start a dinner party

Last Friday a few of my girl friends came over for dinner and while waiting for everyone to arrive we had some bubbly, this sparkling wine from Loire, and crisps. When most people had arrived I brought out two types of crostini, still casually sitting on the sofas.

One of the toppings were suppose to be the same as on Toast Öjeby, a mixture of crayfish, sharp cheese, dill, cumin and honey, but as Waitrose and Sainsbury’s both failed to deliver crayfish, I made the same mixture with coldwater prawns instead. And parsley instead of dill as I hadn’t bought enough (yep, it was one of those weeks). Substituting the crayfish with prawns worked well flavour wise but it didn’t look as pretty. As one of my friends is not that keen on shellfish I also served a bunch of crostini topped with homemade gravadlax (cured salmon) and dill cream cheese.

Crostini with gravadlax crostini and dill cream cheese, makes 30

500 g salmon fillet

2 tbsp sea salt

1 tbsp caster sugar

2 tbsp chopped dill

1 large baguette

olive oil

150 g cream cheese

1 handful dill, finely chopped

1 tsp dijon mustard

a dash of honey

salt and pepper

Start 48 hours before serving. Remove the skin from the salmon. Mix sugar, salt and dill and pat it onto the fish. Place in a small dish and cover with cling. Refrigerate for 48 hours. 

Before serving, make the crostini by slicing the baguette thinly, placing the slices on parchment paper on a baking tray. Drizzle with olive oil and bake in 200C oven until crisp and golden, approx 10-15 minutes. Leave to cool.

Pat the salmon dry with kitchen towel and slice thinly. Mix cream cheese with dill, honey and mustard. Season. Divide the salmon slices on the crostini, place a teaspoon sized dollop of dilly cream cheese on top, season and serve.
